History Review

Werner Poss started POSS mechanical separator development in 1971. Original development work, continuous refinements and a range of machine configurations were developed over a number of years in a proprietary in-house production operation.

POSS Design Ltd. was established in 1978 and has been marketing this proven line of mechanical separators for over the last 30 years. There are currently over 500 installations in over 50 countries.

POSS has pioneered the production of mechanically separated meat with exceptionally high textural qualities. The final product consists of meat tissue strands, which increase the binding quality, and expands the range of uses, especially where texture and appearance are important. This occurs by use of the unique patented "screen plate separation head" design which keeps the separation temperature to low levels, eliminates the potential to denature the protein and maintains the functional properties of the meat.

POSS equipment is manufactured to uncompromising quality standards and is guaranteed to perform to POSS specifications. It is designed for ease of assembly and disassembly for cleaning. The system can be maintained in the most productive condition with a minimum of maintenance.

POSS equipment operates in the range of 200 kg/hr (input) to over 15,000 kg/hr. Higher throughput rates are available on request.

Process Refinements 1. Auto Restrictor The traditional method of yield control is by the manual adjustment of a backpressure configuration called a "restrictor".

POSS is unique in the industry by making available a hydraulically controlled "Automatic Restrictor". Experience worldwide has seen yield improvements of between 1½ % to as high as 4% compared to the conventional manually adjusted restrictor. This feature is readily adaptable to existing equipment and can be "retro-fitted" on to larger capacity POSS machines.

2. Inline Pumps (ILP):  In some cases, more processing pressure is required than can be generated with rotary screw machines. This can be due to the nature of the product being processed or when perforated screens with very small holes are being used. An inline pump was developed to allow these products to be processed.  Also "soft raw materials" eg. boneless turkey drums, chicken or turkey boney trim, etc. can be processed more efficiently when the ILP is housed between the feed auger and desinewing screw.

Existing POSS separators can also be equipped with inline pumps.

For two-screw machines, the pump assembly is fully interchangeable with the existing center bearing or knife assembly. Even existing single-screw POSS machines can be modified to incorporate an inline pump.

3. Comminuted Meat Comminuted meat can be produced in two ways: 3.1 Refine the high textured mechanically separated meat through an emulsifier. 3.2 Configure the POSS machine with perforated screens having holes of a small diameter (0.6m ±). In some cases, an inline pump is required.

Alternative 3.1 allows the processor to produce either the highly textured product and/or a paste-like, finely comminuted product, depending on further processing requirements.

Processing Applications - In addition to meat/bone Separation

1. Desinewing of Beef Shanks

1.1_ Beef Hind Shanks The CCM 2000D POSS single-screw machine is being successfully used by major beef processors in the U.S. to desinew bone-out beef hind shanks.

The recovered product is high quality coarse ground beef (75 to 90% by volume) along with a finer ground beef (10 to 25% by volume). The coarse ground beef portion has fat content lower than the shank meat introduced into the machine.

1.2 Beef Fore Shanks A more recent development is the desinewing of fore shanks, which are considerably larger than hind shanks.

The POSS CCM 2000 D2 machine, a two-screw machine, was developed for this application. This is a heavy-duty machine, which has the capability of controlled size reduction prior to the desinewing operation for more consistent processing. The end product is similar to that noted above for operation with single screw machines.

2. Desinewing of Turkey Drumsticks: A modified version of the CCM 2000D machine is used for desinewing of bone-out turkey drumsticks. A high quality, coarse ground meat is produced and earns a higher market value than standard MST.

2.1. Desinewing of wishbones and boney trim: As mentioned above an In Line Pump (ILP) in place of the standard center bearing can be housed between the feed auger and desinewing screw to effectively separate small bone and sinew from these “soft raw materials” and achieve higher through put and yield rates than a standard machine configuration.

3. Ground Turkey: POSS machines using the patented screen plate separation head are approved for the production of ground turkey for the USDA School Lunch Program (covered by commodity regulation).

4. Soft (Low Pressure) Deboning: A range of POSS machines (both single and two screw configurations) can be configured to operate under low-pressure conditions. This allows processing with minimal bone breakage where this is a regulatory requirement in the labeling of end use products. The end product is a high quality, coarse ground poultry. Conversion kits are available for existing equipment.

The POSS PDE 2500 DS two-stage machine has been developed for this application. Product recovery from Stage 1 is a coarse ground product. The remainder of recovery from Stage 2 is MSM. Approximately 30-45% of recovery occurs in Stage 1.

5. Processing of Poultry Trim: As mentioned in paragraph 2.1 above POSS mechanical desinewing machines are being successfully used by both chicken and turkey processors to remove bone chips & sinew from “boney trim” generated on standard deboning lines. The resulting trim meat produced on the POSS desinewing machine can be classified as a true ground poultry product

6. Pork Skin Defatting (PSDF): POSS has perfected the art of separating the fat from tough pork skins and achieving a clean, diminutive size pork skin that can a valuable source of collagen for cosmetic and pharmaceutical processors. The major opportunity for POSS Defatting machines is for large gelatin plants to upgrade “House Skins” in to a higher yielding raw material by lowering the fat content, thereby dramatically adding value to the skin processing application.
